The creation of two brothers from Banchary, Scotland, Dark Matter Spiced Rum has captured the attention of many, with Buzzfeed naming it the number one Scottish spirit to watch out for this year, and The Spirits Business awarding it with a double gold medal at the 2016 Global Rum Masters. So, what exactly is it about the rum, that the creators describe as ‘taste equivalent of warping into a liquid black hole but without every atom in your body being crushed to an infinitely small point’, that has captured the hearts of many?
Jim Ewan, creator of Dark Matter, first came up with the idea to create the spiced rum in 2011 during a trip to the Dominican Republic. After attempting to visit several rum distilleries on the island with his idea (but to no avail), Jim decided to pitch the idea to his brother John, who, albeit apprehensive at first, decided to embark on the rum-making journey with his brother. After years of research and several fundraising attempts later, Dark Matter spiced rum and Scotland’s first ever rum distillery were born.
Dark Matter Spiced Rum is a molasses-based rum driven by the owners curiosity and love for science. The Ewan brothers describe it as a spirit that combines ‘knowledge and imagination’ with a flavour that is created through ‘systematic study, observation and experiment’. Ruby in colour, Dark Matter features full-bodied notes of long pepper, fresh ginger, green peppercorns and all spice, and balances perfectly between intense ginger, spicy and warm pepper, and sweet biscuit. To get the best flavour experience, the spiced rum is best mixed with a premium ginger beer, served over ice- a concoction aptly named the Highland Storm.
